3 Yummy Kid-Friendly Recipes to Try this Weekend!

Spaghetti & Meatball Tacos

YIELDS: 8 PREP TIME: 20 MINS TOTAL TIME: 45 MINS INGREDIENTS 1 lb. ground chicken 1 large egg 1/4 c. Italian bread crumbs 1/2 c. freshly grated Parmesan, divided, plus more for garnish 2 tsp. Italian seasoning 2 tsp. garlic powder kosher salt Freshly ground black pepper 1 lb. spaghetti 1 c. marinara 8 flat-bottom taco shells DIRECTIONS Preheat oven to 350º and line a baking sheet with parchment paper. Make chicken meatballs: In a large bowl, stir together ground chicken, egg, Italian bread crumbs, 1/4 cup Parmesan, Italian seasoning, garlic powder, salt, and pepper.

  1. Form into small balls and transfer to prepared baking sheet.

  2. Bake until golden and no longer pink, 20 to 22 minutes.

  3. Meanwhile, break spaghetti in half. In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain and return to pot.

  4. Add marinara to pot, baked meatballs, and remaining 1/4 cup Parmesan. Stir together.

  5. Stuff into taco shells and sprinkle with more Parmesan.

Mac 'N Cheese Waffle

YIELDS: 10 PREP TIME: 20 MINS TOTAL TIME: 40 MINS INGREDIENTS 1 (6-8 oz) box macaroni and cheese 2 tbsp. butter 1/4 c. milk 1 1/2 c. shredded Cheddar cheese (divided) 1 egg, beaten 1/3 c. bread crumbs Nonstick cooking spray, for the waffle iron


  1. In a medium saucepan filled with boiling water, cook macaroni until al dente, about 7-8 minutes. Drain.

  2. Melt 2 tablespoons of butter in the same pot over low heat. Add milk and cheese packet and whisk well. Turn off the heat and return macaroni to pot. Add 1 cup cheddar and stir until the cheese has melted and the macaroni is evenly coated in the cheese sauce. Stir in egg and bread crumbs until evenly combined.

  3. Meanwhile, preheat the waffle iron. When the waffle iron is hot, spray with cooking spray. Scoop about ½ cup of the macaroni and cheese into the center of the grate and sprinkle with more cheese. Close the iron and cook until golden and crispy, about 5 minutes. Use forks to carefully remove the waffle from the iron. Repeat until you’ve used up all the macaroni and cheese.

  4. Serve warm.

4-Ingredient Ravioli Lasagna

PREP TIME: 10 minutes TOTAL TIME: 55 minutes

Ingredients 2 25-ounce jars marinara pasta sauce 2 30-ounce packages frozen cheese ravioli (I like to use spinach cheese ravioli) 1 1/2 cups shredded mozzarella cheese 1/2 cup grated Parmesan cheese 1/3 cup chopped fresh basil leaves optional garnish


  1. Preheat the oven to 400 degrees F. Spray a 9x13 baking dish with cooking spray.

  2. Spread half of a jar of marinara sauce evenly across the bottom of the prepared baking dish. Add 1 package of ravioli in an even layer over the sauce. Top with the rest of the half jar of marinara sauce.

  3. Sprinkle 3/4 cup of mozzarella cheese and 1/4 cup of Parmesan cheese over the sauce. Add another layer of sauce, ravioli, sauce, mozzarella and Parmesan cheese.

  4. Spray a piece of aluminum foil with cooking spray. Cover the dish with aluminum foil, sprayed side down. Bake the lasagna for 30 minutes. Uncover and bake for an additional 15 minutes, or until the cheese is melted and the sauce is bubbly. Remove pan from oven let sit for 5 minutes. Garnish with basil, if desired. Serve warm.

  5. Note-You don't have to thaw or cook the ravioli first, just put it in the pan frozen. We like to serve garlic bread on the side!
